Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish and set aside.
Peel and cut the sweet potatoes into 1-inch cubes. Place them in a pot of salted boiling water and cook for 8–10 minutes, or until just tender. Drain and set aside.
Season the chicken breasts with 1 teaspoon of salt, black pepper, and paprika. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the chicken for 4-5 minutes per side, or until browned and cooked through. Remove from the skillet, let rest for 5 minutes, and cut into bite-sized pieces.
In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic and diced onion for 2-3 minutes, until fragrant and softened. Add the broccoli florets and cook for another 3-4 minutes. Remove from heat and set aside.

Stir in 1.5 cups of shredded cheddar cheese until melted. Season the sauce with the remaining 0.5 teaspoon of salt and a pinch of pepper.
In a large mixing bowl, combine the cooked sweet potatoes, chicken pieces, and sautéed vegetables. Pour the cheese sauce over the mixture and gently toss until everything is well coated.
Transfer the mixture to the prepared casserole dish. Sprinkle the remaining 0.5 cup of shredded cheddar cheese evenly on top.
Bake in the preheated oven for 25–30 minutes, or until the top is golden and bubbly.
