Ingredients

  • 4 pieces Chicken breast
  • 3 medium Summer squash (yellow squash or zucchini)
  • 1.5 cups Cherry tomatoes
  • 3 tablespoons Olive oil
  • 3 pieces Garlic cloves (minced)
  • 2 teaspoons Fresh rosemary (chopped)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 piece Lemon
  • 4 sheets Aluminum foil (heavy-duty recommended)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut the summer squash into thin rounds and halve the cherry tomatoes.

Step 3

In a large bowl, toss the summer squash, cherry tomatoes, olive oil, minced garlic, rosemary, oregano, salt, and black pepper.

Step 4

Season each chicken breast with a pinch of salt and pepper on both sides.

Step 5

Lay out four sheets of aluminum foil, each about 12 inches long. Spray lightly with cooking spray or apply a thin layer of olive oil to prevent sticking.

Place one chicken breast in the center of each sheet of foil.
