Preheat your oven to 400°F (200°C).
Cut the summer squash into thin rounds and halve the cherry tomatoes.
In a large bowl, toss the summer squash, cherry tomatoes, olive oil, minced garlic, rosemary, oregano, salt, and black pepper.
Season each chicken breast with a pinch of salt and pepper on both sides.
Lay out four sheets of aluminum foil, each about 12 inches long. Spray lightly with cooking spray or apply a thin layer of olive oil to prevent sticking.
Place one chicken breast in the center of each sheet of foil.
Top each chicken breast evenly with the squash and tomato mixture, ensuring plenty of vegetables and herbs are included.
Slice the lemon into thin rounds and place one or two slices on top of each chicken and vegetable mound.
