  • 2 tablespoons Unsalted butter
  • 1 medium Yellow onion, diced
  • 2 stalks Celery stalks, diced
  • 2 cloves Garlic cloves, minced
  • 2 cans Cream of chicken soup
  • 1 cup Sour cream
  • 1 cup Chicken broth
  • 1 box Boxed stuffing mix
  • 1.5 cups Water (for stuffing mix)
  • 1 cup Shredded cheddar cheese

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish lightly with cooking spray or butter.

Step 2

Season the chicken breasts with salt and black pepper on both sides.

Step 3

In a large skillet, heat olive oil over medium heat. Sear the chicken breasts for 3-4 minutes per side until lightly browned. Remove and set them aside.

Step 4

In the same skillet, melt the butter. Add diced onions, diced celery, and minced garlic. Sauté for 4-5 minutes until soft and fragrant.

Step 5

In a mixing bowl, combine cream of chicken soup, sour cream, and chicken broth. Stir until smooth and well blended.

Step 6

Spread the sautéed onion, celery, and garlic mixture evenly at the bottom of the prepared casserole dish.

Step 7

Place the browned chicken breasts on top of the sautéed vegetables in the casserole dish.

Step 8

Pour the cream of chicken soup mixture evenly over the chicken.

Step 9

In a separate bowl, prepare the stuffing mix by combining the boxed stuffing with 1.5 cups of water, gently stirring until the mixture is moistened.

Step 10

Spread the prepared stuffing evenly over the chicken and sauce in the casserole dish.

Step 11

Sprinkle the shredded cheddar cheese evenly over the stuffing layer.

Step 12

Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes.

Step 13

Remove the aluminum foil and bake uncovered for an additional 15 minutes or until the cheese is melted and bubbly and the casserole is heated through.
