Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 6 cups Mixed salad greens
  • 1 cup Fresh strawberries, hulled and sliced
  • 1 cup Sliced almonds, toasted
  • 1 half-cup Goat cheese crumbles
  • 2 tablespoons Olive oil
  • 1.5 tablespoons Balsamic vinegar
  • 1 teaspoon Honey
  • 0.5 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your grill or grill pan over medium heat and lightly grease it with cooking spray.

Season both sides of the chicken breasts with salt and black pepper.

Step 3

Grill the chicken breasts for 6-8 minutes on each side, or until the internal temperature reaches 165°F (74°C). Remove from the grill and let rest for 5 minutes, then slice into thin strips.
