  • 4 pieces boneless, skinless chicken thighs
  • 8 oz smoked sausage
  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 2 pieces bell peppers (red, yellow, or green), sliced
  • 3 cloves garlic, minced
  • 1 lb baby potatoes, halved
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Season the chicken thighs with paprika, oregano, salt, and black pepper.

Add the chicken thighs to the skillet and sear for 3-4 minutes on each side until golden brown. Remove and set aside.
