  • 2 pieces boneless, skinless chicken breasts

  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup chicken broth
  • 1 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and slice the smoked sausage into rounds about 1/4-inch thick.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until lightly browned and cooked through. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the smoked sausage slices and cook for 3-4 minutes, stirring occasionally, until browned. Remove the sausage and set aside with the cooked chicken.

Let the mixture simmer for 5 minutes, allowing the flavors to meld together and the liquid to reduce slightly.

Step 9

Remove the skillet from heat and garnish with chopped parsley. Serve hot on its own, or over rice, pasta, or crusty bread.
