  • 2 pieces Ciabatta bread or panini rolls
  • 1 cup Cooked chicken breast
  • 1 cup Roasted red peppers
  • 4 slices Mozzarella cheese
  • 1 handful Baby spinach leaves
  • 2 tablespoons Pesto sauce
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your panini press or a grill pan over medium heat.

Step 2

Carefully slice the ciabatta bread or panini rolls in half horizontally.

Step 3

Spread 1 tablespoon of pesto sauce evenly onto the inside of each bread half.

Step 4

Layer the bottom halves of the bread with cooked chicken breast, roasted red peppers, mozzarella slices, and baby spinach leaves.

Step 5

Place the top halves of the bread on the fillings and gently press down to form a sandwich.

Brush the outside of each panini with olive oil to achieve a golden, crispy exterior when grilled.
