Ingredients

  • 4 pieces chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper

  • 3 cloves garlic cloves, minced
  • 1 medium white onion, finely chopped
  • 1.5 cups long-grain white rice
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon lemon zest

Directions

Step 1

Season both sides of the chicken breasts with salt and black pepper.

Step 2

Heat the olive oil in a large, deep skillet or pan over medium heat. Once hot, add the chicken breasts and cook for 4–5 minutes per side, or until golden brown. Remove the chicken from the pan and set aside.

In the same pan, melt the butter. Add the minced garlic and chopped onion, and sauté for 2–3 minutes until fragrant and softened.

Stir in the rice and cook for 1–2 minutes, allowing the grains to slightly toast.

Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover the pan, and allow the rice to simmer for 15 minutes.
