  • 4 pieces chicken thighs (bone-in, skin-on)

  • 3 cloves garlic cloves, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup fresh orange juice
  • 1 teaspoon orange zest
  • 1 teaspoon thyme leaves (fresh)
  • 1 teaspoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Pat the chicken thighs dry with a paper towel and season both sides with salt and pepper.

Step 2

Heat olive oil in a large, deep skillet or sauté pan over medium-high heat. Add the chicken thighs, skin-side down, and sear for 4-5 minutes on each side until golden brown. Remove the chicken from the pan and set aside.

Step 3

Reduce the heat to medium and in the same pan, add the butter. Once melted, stir in the diced onion and cook for 3-4 minutes until soft and translucent.

Add the minced garlic and cook for an additional 30 seconds until fragrant.

Stir in the rice and toast lightly in the pan for 1-2 minutes, ensuring it is well coated with the butter and aromatics.

Pour in the chicken broth, orange juice, orange zest, thyme, soy sauce, honey, salt, and pepper. Stir well to combine the ingredients.

Return the chicken thighs to the pan, skin-side up, placing them on top of the rice mixture. Cover the pan with a tight-fitting lid and reduce the heat to low.

Simmer for 25-30 minutes until the rice is tender, the chicken is cooked through (internal temperature of 165°F/74°C), and most of the liquid is absorbed.
