Ingredients

  • 2 pieces Chicken breast
  • 2 tablespoons Olive oil
  • 2 tablespoons Taco seasoning mix
  • 1 cup Refried beans
  • 4 Flour tortillas (large)
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 1 cup Lettuce (shredded)
  • 1 Tomato (diced)
  • 2 tablespoons Cilantro (chopped, optional)
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Heat 2 tablespoons of olive oil in a skillet over medium heat.

Step 2

Season the chicken breasts with taco seasoning, salt, and black pepper on both sides.

Step 3

Cook the chicken breasts in the skillet for about 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from heat and let rest for 5 minutes.

Step 4

While the chicken is resting, warm the refried beans in a small saucepan over low heat, stirring occasionally.

Step 5

Dice the rested chicken into small bite-sized pieces.

Lay a flour tortilla flat on a clean surface. Spread 1/4 cup of refried beans in the center of the tortilla.
