Ingredients

  • 500 grams chicken thighs and drumsticks
  • 500 grams pork belly
  • 3 tablespoons canola oil
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 3 large ripe tomatoes, chopped
  • 1 cup tomato sauce
  • 2 cups water
  • 2 tablespoons soy sauce
  • 2 pieces bay leaves
  • 2 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 1 large green bell pepper, sliced into strips
  • 1 large red bell pepper, sliced into strips
  • 1 cup green peas
  • to taste salt
  • to taste ground black pepper

Directions

Step 1

Heat 2 tablespoons of canola oil in a large pot over medium heat.

Step 2

Sear the chicken pieces until lightly browned on all sides, about 3–5 minutes per side. Remove from the pot and set aside.

Step 3

In the same pot, add the remaining tablespoon of oil and sear the pork belly pieces until browned, about 5 minutes. Remove from the pot and set aside with the chicken.

Step 4

Using the same pot, sauté the minced garlic and chopped onions until fragrant and translucent, about 2 minutes.

Step 5

Add the chopped tomatoes and cook until softened, about 5 minutes.

Step 6

Pour in the tomato sauce, water, and soy sauce. Stir well to combine.

Step 7

Add the bay leaves, then return the chicken and pork to the pot. Bring the mixture to a boil.

Step 8

Lower the heat to a simmer and cover. Cook for 20 minutes, stirring occasionally.

Step 9

Add the carrots and potatoes to the pot. Continue simmering for another 15 minutes or until they are tender.

Step 10

Stir in the green and red bell peppers, along with the green peas. Cook for 5 more minutes.

Step 11

Season with salt and ground black pepper to taste.

Remove from heat and discard the bay leaves. Let the apritada rest for a few minutes to allow the flavors to meld.

Step 13

Serve warm with steamed rice.
