Ingredients

  • 500 grams boneless, skinless chicken thighs
  • 200 grams pineapple chunks (fresh or canned)
  • 400 ml coconut milk
  • 2 tablespoons vegetable oil
  • 1 large yellow onion, finely chopped
  • 3 pieces garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons red curry paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 tablespoon brown sugar
  • 1 tablespoon fish sauce
  • 0.5 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped
  • 4 pieces lime wedges
  • 4 cups cooked jasmine rice (for serving)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

Heat the vegetable oil in a large skillet or wok over medium heat.

Step 3

Add the chopped onion and sauté for 2-3 minutes until translucent.

Step 4

Stir in the garlic and ginger, cooking for an additional minute until fragrant.

Step 5

Add the red curry paste, turmeric powder, and ground cumin to the skillet. Stir well to coat the onions and release the spices’ aroma, about 1-2 minutes.

Step 6

Add the chicken pieces to the skillet and cook for 4-5 minutes, stirring frequently, until they are lightly browned on the outside.

Step 7

Pour in the coconut milk and bring to a gentle simmer. Let the mixture cook for 10 minutes, stirring occasionally.

Step 8

Stir in the pineapple chunks, brown sugar, fish sauce, and salt. Let the curry simmer for an additional 5 minutes to allow the flavors to meld.

Step 9

Turn off the heat and sprinkle the curry with fresh cilantro.

Step 10

Serve the chicken and pineapple curry over cooked jasmine rice with lime wedges on the side for squeezing over the top.
