Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper, freshly ground
  • 1 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 medium Red bell pepper, sliced into strips
  • 1 medium Yellow bell pepper, sliced into strips
  • 3 cloves Garlic cloves, minced
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, and paprika.

Step 2

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

Step 3

Sear the chicken breasts for 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, melt the remaining 1 tablespoon of butter over medium heat.

Step 5

Add the sliced red and yellow bell peppers to the skillet and sauté for 4-5 minutes until they begin to soften.

Step 6

Add the minced garlic and cook for an additional 1 minute, stirring frequently, until fragrant.

Step 7

Pour the chicken broth into the skillet and use a spatula to deglaze the pan, scraping up any browned bits from the bottom.

Step 8

Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Simmer the sauce for 3-4 minutes, stirring occasionally, until slightly thickened.

Step 9

Return the seared chicken to the skillet, nestling it into the sauce. Simmer for another 5-7 minutes, spooning the sauce over the chicken as it reheats.

Step 10

Garnish with chopped parsley and serve immediately over rice, pasta, or alongside crusty bread for dipping.
