Ingredients

  • 2 pieces Chicken breast
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 1 medium Yellow onion
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 teaspoons Paprika
  • 4 tablespoons Mayonnaise
  • 4 pieces Lettuce leaves
  • 4 pieces Cheddar cheese slices
  • 4 pieces Sandwich buns
  • 1 tablespoon Fresh parsley (optional)

Directions

Step 1

Season the chicken breasts with salt, black pepper, and paprika on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Cook the chicken breasts for 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F/74°C). Set aside to rest for 5 minutes before slicing into thin strips.

Step 4

While the chicken is resting, slice the red bell pepper, green bell pepper, and yellow onion into thin strips. Mince the garlic cloves.

Step 5

In the same skillet, add another tablespoon of olive oil and sauté the peppers, onion, and garlic for 5-7 minutes until softened and slightly caramelized. Season with a small pinch of salt and black pepper.

Step 6

Toast the sandwich buns lightly on a dry pan or in the oven for 2-3 minutes until warm and slightly crisp.
