Season the chicken breasts with salt and black pepper on both sides.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes before slicing into thin strips.
While the chicken cools, wash and dry the mixed salad greens. Place them in a large salad bowl.
Slice the peaches into thin wedges, and thinly slice the red onion. Add both to the salad greens.
