Ingredients

  • 2 pieces Boneless, skinless chicken breast
  • 1 teaspoon Salt

  • 2 tablespoons Olive oil
  • 8 ounces Penne pasta
  • 1 cup Blueberries
  • 2 cups Baby spinach
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Red onion, thinly sliced
  • 0.5 cup Feta cheese, crumbled
  • 2 tablespoons Lemon juice
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic, minced
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season both sides of the chicken breasts with salt and black pepper.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Cook the chicken breasts for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from skillet and let rest for 10 minutes, then slice into thin strips.
