Slice the chicken breast into thin strips and season with salt and black pepper.
Peel and de-seed the ripe papaya, then cut it into medium-sized cubes.
Slice the red bell pepper into thin strips and chop the green onions into small pieces, separating the white parts from the green parts.
Mince the garlic and finely grate the ginger.
In a small bowl, mix the soy sauce, oyster sauce, sesame oil, cornstarch, and water until combined to make the stir-fry sauce.
