  • 6 pieces Chicken thighs (bone-in, skin-on or skinless)

  • 2 tablespoons Olive oil
  • 4 pieces Garlic cloves (minced)
  • 1 medium Yellow onion (diced)
  • 1 cup Chicken broth
  • 14 ounces Crushed tomatoes (canned)
  • 1 cup Kalamata olives (pitted and halved)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Red pepper flakes (optional)
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the chicken thighs on both sides until golden brown, about 3-4 minutes per side. This step is optional but adds extra flavor. Transfer the seared chicken to the crock pot.
