  • 4 pieces boneless, skinless chicken breasts
  • 250 grams white or cremini mushrooms
  • 1 medium onion
  • 3 pieces garlic cloves
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Prepare the chicken breasts by patting them dry with paper towels and seasoning with half the salt and pepper.

Step 2

Clean the mushrooms and slice them thinly. Finely chop the onion and mince the garlic.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown. Remove them from the skillet and set aside.

In the same skillet, add the remaining olive oil and the butter. Once melted, add the onions and cook for 2-3 minutes until softened.
