Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 250 grams button mushrooms
  • 4 tablespoons honey
  • 3 tablespoons soy sauce
  • 3 cloves minced garlic
  • 1 tablespoon cornstarch
  • 1 cup water
  • 0.5 cup chicken broth
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 3

Add the remaining 1 tablespoon of olive oil to the skillet. Add the minced garlic and button mushrooms. Sauté for 5 minutes until the mushrooms are tender and lightly browned.

Step 4

In a small bowl, whisk together the honey, soy sauce, chicken broth, and cornstarch until smooth.

Step 5

Return the chicken breasts to the skillet. Pour the honey soy sauce mixture over the chicken and mushrooms.

Step 6

Bring the sauce to a simmer over medium heat. Cook for 10-12 minutes, occasionally spooning the sauce over the chicken, until the chicken is cooked through and the sauce has thickened.

Step 7

If the sauce becomes too thick, stir in 1-2 tablespoons of water to thin it out slightly.

Step 8

Remove the skillet from the heat and garnish the dish with freshly chopped parsley, if desired.

Step 9

Serve the Chicken and Mushrooms in Honey Sauce over steamed rice, mashed potatoes, or your favorite side dish. Enjoy!
