  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the chicken breasts on both sides with a pinch of salt and pepper.

In a large pot or Dutch oven, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.
