Ingredients

  • 1 pound Boneless, skinless chicken breast

  • 2 medium Carrots, chopped
  • 2 stalks Celery stalks, chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Smoked paprika
  • 6 cups Chicken broth
  • 1 14.5-ounce can Diced tomatoes, no salt added
  • 1 cup Dried lentils, rinsed
  • 2 cups Spinach, chopped
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Cut the chicken breast into bite-sized pieces. Add the chicken to the pot and sauté for 5-7 minutes until lightly browned. Remove the chicken and set it aside.
