Ingredients

  • 2 pieces chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 whole fresh kiwis
  • 0.5 whole red onion
  • 1 whole lime
  • 2 tablespoons cilantro
  • 6 pieces flour tortillas
  • 0.25 cup sour cream
  • 1 teaspoon hot sauce (optional)

Directions

Step 1

Trim excess fat from the chicken breasts and pat them dry with a paper towel.

Step 2

In a small bowl, mix olive oil, ground cumin, smoked paprika, garlic powder, salt, and black pepper.

Step 3

Rub the spice mixture evenly over the chicken breasts. Set aside to marinate while preparing other ingredients.

Step 4

Peel and dice the kiwis into small chunks. Place them in a bowl.

Step 5

Finely dice the red onion and add it to the bowl with the kiwi.

Step 6

Chop the cilantro and squeeze the juice from the lime over the kiwi mixture. Mix gently to combine. Set aside as the kiwi salsa.

Step 7

Heat a skillet over medium heat and add 1 tablespoon of olive oil. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C).

Step 8

Remove the cooked chicken from the skillet and let it rest for 5 minutes before slicing into thin strips.

Step 9

Warm the flour tortillas in a dry skillet or microwave until pliable.

Step 10

Spread a small amount of sour cream on each tortilla and add a few strips of chicken.

Step 11

Top the chicken with a generous spoonful of kiwi salsa.

Step 12

Drizzle with hot sauce if desired and serve immediately.
