Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 12 ounces Pasta (such as penne or spaghetti)
  • 6 cups Fresh kale
  • 3 tablespoons Olive oil
  • 4 cloves Garlic
  • 1 cup Chicken broth
  • 0.5 teaspoons Red pepper flakes
  • 0.5 cups Parmesan cheese (grated)
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil, and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining and set the pasta aside.

Step 2

While the pasta cooks, prepare the chicken. Cut the chicken breasts into bite-sized pieces and season with 0.5 teaspoons of salt and 0.25 teaspoons of black pepper.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken pieces and sauté for about 5-7 minutes, or until golden brown and fully cooked. Remove the chicken and set aside on a plate.

Step 4

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes, cooking until fragrant, about 30 seconds.

Add the kale to the skillet and sauté for 2-3 minutes, stirring frequently, until the kale wilts slightly.

Step 6

Pour in the chicken broth and stir. Allow the broth to simmer for 3-4 minutes to help soften the kale.

Return the cooked chicken to the skillet, and mix in the drained pasta. If the mixture seems dry, add reserved pasta water, a few tablespoons at a time, until the desired consistency is reached.

Stir in the Parmesan cheese, lemon juice, and the remaining salt and pepper. Toss everything together until well combined and heated through.

Step 9

Serve the Chicken and Kale Sauté with Pasta warm, garnished with extra Parmesan cheese if desired.
