Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 pieces garlic cloves, minced
  • 4 cups kale, stems removed and leaves chopped
  • 12 ounces penne pasta
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.75 cup Parmesan cheese, grated
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil, and cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water and drain the rest. Set aside.

Step 2

While the pasta is cooking, season both sides of the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Transfer the chicken to a plate and let it rest for 5 minutes before slicing into thin strips.

Using the same skillet, lower the heat to medium and add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
