Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Hummus
  • 4 pieces Whole wheat tortillas
  • 1 small Cucumber
  • 1 cup Cherry tomatoes
  • 0.5 small Red onion
  • 1 cup Fresh spinach
  • 1 tablespoon Fresh lemon juice

Directions

Step 1

Preheat a skillet over medium heat and drizzle in 2 tablespoons of olive oil.

Step 2

Season the chicken breasts with garlic powder, paprika, salt, and black pepper. Rub the spices evenly over the chicken.

Step 3

Cook the chicken breasts in the skillet for 4-5 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the skillet and let rest for 5 minutes before slicing into thin strips.

Meanwhile, prepare the vegetables. Thinly slice the cucumber, halve the cherry tomatoes, and finely slice the red onion.
