Ingredients

  • 2 cups Cooked chicken breast
  • 1 cup Red seedless grapes
  • 3 tablespoons Mayonnaise
  • 2 teaspoons Honey mustard
  • 4 slices Provolone cheese slices
  • 1 cup Fresh baby spinach
  • 4 slices Sourdough bread slices
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a medium bowl, shred the cooked chicken breast using two forks.

Step 2

Cut the red seedless grapes in half and add them to the bowl with the chicken.

Step 3

Mix in mayonnaise, honey mustard, salt, and black pepper. Combine until the chicken salad is well coated and evenly mixed.

Step 4

Preheat a panini press or a large skillet over medium heat.

Step 5

Assemble each panini by layering one slice of sourdough bread with a slice of provolone cheese, half of the chicken and grape mixture, a handful of fresh baby spinach, and another slice of provolone cheese. Top with another slice of sourdough bread.

Brush the outside of each sandwich lightly with olive oil on both sides.
