Slice the chicken breast into thin, bite-sized strips. Season with salt and pepper. Set aside.
Peel and segment the grapefruit, ensuring to remove any seeds and membranes. Reserve any juices in a small bowl for the sauce.
In a small mixing bowl, combine soy sauce, honey, grapefruit juice (about 2 tablespoons), and cornstarch mixed with water. Mix well and set the sauce aside.
Finely mince the garlic cloves and grate the fresh ginger. Slice the red bell pepper into thin strips and trim the ends off the snow peas. Chop the green onions into small pieces.
Heat a wok or large skillet over medium-high heat. Add vegetable oil and sesame oil.
