  • 1 medium Onion (diced)
  • 2 medium Carrots (sliced)
  • 2 stalks Celery (sliced)
  • 3 cloves Garlic (minced)
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt (for dumplings)
  • 1 cup Milk
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken thighs dry with a paper towel and season both sides with 1 teaspoon of salt and 1 teaspoon of black pepper.

In a large, oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Sear the chicken thighs, skin-side down, for 5–6 minutes until golden brown. Flip and cook for another 2 minutes. Remove the chicken and set aside.

Reduce the heat to medium. Add the butter to the skillet and melt it. Stir in the diced onion, carrots, and celery. Cook for 5–6 minutes until softened.
