Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 6 cups Low-sodium chicken broth
  • 2 medium Carrots, diced
  • 2 Celery stalks, diced
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 Bay leaf
  • 1 tsp Dried thyme
  • 1 cup Low-fat milk
  • 1 cup All-purpose flour
  • 1.5 tsp Baking powder
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 1 container Cooking spray
  • 2 tbsp Fresh parsley, chopped (optional)

Directions

Step 1

Spray a large pot or Dutch oven with cooking spray and heat over medium heat.

Step 2

Add diced carrots, celery, and onion to the pot, and sauté for 5 minutes until softened. Stir in minced garlic and cook for 1 more minute.

Step 3

Add chicken broth, the chicken breasts, bay leaf, thyme, salt, and pepper to the pot. Bring to a boil, then reduce to a simmer. Simmer for 20 minutes or until the chicken is cooked through.

Step 4

Remove the chicken breasts and let them cool on a cutting board. Shred the chicken into bite-sized pieces using two forks and set aside.

Step 5

Discard the bay leaf from the pot. Return the shredded chicken to the pot and keep the mixture at a low simmer.

In a large mixing bowl, combine the flour, baking powder, and a pinch of salt. Gradually add the low-fat milk and stir until a soft dough forms.
