  • 4 pieces boneless, skinless chicken breasts
  • 3 tablespoons butter
  • 1 medium yellow onion, finely diced
  • 2 stalks celery, diced
  • 2 10.5-ounce cans cream of chicken soup
  • 1 cup sour cream
  • 6 cups seasoned stuffing mix
  • 2.5 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish and set it aside.

Step 2

Place the chicken breasts in a large pot, cover them with water, and bring to a boil over medium-high heat. Reduce heat to medium and simmer for 15-20 minutes, or until the chicken is cooked through. Remove the chicken from the pot, let it cool, and shred it using two forks.

Melt the butter in a skillet over medium heat. Add the diced onion and celery, and sauté for 5 minutes, or until softened. Remove from heat and set aside.

In another large bowl, combine the remaining stuffing mix with the remaining 2 cups of chicken broth. Toss until the stuffing is moistened but not soggy. Evenly spread this stuffing mixture over the chicken layer in the casserole dish.

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 20 minutes, or until the top is golden brown and crispy.

Step 8

Remove from the oven and let the casserole cool for 5-10 minutes before serving. Optionally, garnish with freshly chopped parsley.
