Ingredients

  • 2 pieces Boneless, skinless chicken breast
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 cups Fresh corn kernels (from about 2 ears of corn)
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 0.25 cup Red onion, finely diced
  • 0.25 cup Fresh parsley, chopped
  • 0.5 cup Feta cheese, crumbled
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard

Directions

Step 1

1. Preheat a skillet over medium heat and add 1 tablespoon of olive oil.

2. Season the chicken breasts with salt, pepper, and garlic powder.

3. Place the chicken in the skillet and cook for 6-8 minutes on one side, then flip and cook for another 6-8 minutes, or until the internal temperature reaches 165°F (75°C).

4. Remove the chicken from the skillet and let it rest for 5 minutes before slicing into thin strips.
