  • 2 pieces Boneless, skinless chicken breast
  • 2 tablespoons Olive oil

  • 6 cups Mixed salad greens
  • 1 cup Orange segments
  • 1 cup Grapefruit segments
  • 1 piece Sliced avocado
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Red onion, thinly sliced
  • 2 teaspoons Honey
  • 1 teaspoon Dijon mustard
  • 3 tablespoons Fresh orange juice
  • 2 tablespoons Apple cider vinegar
  • 3 tablespoons Extra-virgin olive oil

Directions

Step 1

Season the chicken breasts with 1 tablespoon of olive oil, salt, and black pepper.

Heat a grill pan or skillet over medium-high heat. Cook the chicken breasts for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes.
