Ingredients

  • 500 grams Boneless chicken thighs
  • 100 grams Cashew nuts
  • 1 teaspoon Black peppercorns
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander seeds
  • 3 pieces Cloves
  • 1 medium, finely chopped Onion
  • 3 cloves Garlic
  • 1 teaspoon, grated Ginger
  • 2 tablespoons Soy sauce
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 2 tablespoons, chopped Fresh coriander leaves

Directions

Step 1

Toast the black peppercorns, cumin seeds, coriander seeds, and cloves in a dry pan over medium heat until aromatic, about 2 minutes. Transfer to a grinder or mortar and pestle and grind into a coarse powder. Set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat. Add the cashew nuts and stir-fry until golden brown, about 2-3 minutes. Remove and set aside.

Step 3

Increase the heat to medium-high and add the remaining tablespoon of vegetable oil to the pan. Add the finely chopped onion and sauté until golden, about 5 minutes.

Stir in the garlic and grated ginger, cooking for another minute until fragrant.
