Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups broccoli florets
  • 12 ounces penne or fusilli pasta
  • 0.5 cup pesto sauce
  • 0.25 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes (optional)
  • 0.5 cup pasta water

Directions

Step 1

Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the chicken breasts for 5-6 minutes per side, or until fully cooked (internal temperature of 165°F). Remove the chicken from the skillet and let it rest before slicing into bite-sized pieces.

Step 3

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for 1 minute, until fragrant.

Step 4

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions, usually 8-10 minutes. During the last 3 minutes of cooking, add the broccoli florets to the boiling pasta water. Reserve 1/2 cup of the pasta water, then drain the pasta and broccoli.

Step 5

Return the skillet with garlic to medium heat. If using, add the cherry tomatoes and cook for 2-3 minutes, until they begin to soften.

Step 6

Add the cooked pasta, broccoli, and sliced chicken to the skillet. Stir in the pesto sauce and 1/4 teaspoon each of salt and black pepper. Pour in the reserved pasta water a little at a time to loosen the sauce, if needed.

Step 7

Sprinkle the grated Parmesan cheese over the pasta and toss to combine evenly.

Step 8

Serve immediately, garnished with extra Parmesan cheese or fresh basil if desired.
