  • 2 pieces Boneless, skinless chicken breasts
  • 2 cups Broccoli florets

  • 1 cup Chicken broth

  • 0.5 teaspoon Garlic powder
  • 1 cup Cherry tomatoes
  • 0.25 cup Red onion
  • 2 tablespoons Fresh cilantro
  • 1 tablespoon Lime juice
  • 0.25 teaspoon Salt (for salsa)

Directions

Step 1

Begin by preparing the chicken. Season both sides of the chicken breasts with olive oil, salt, black pepper, and garlic powder.

Step 2

Heat a large skillet over medium heat. Add 1 tablespoon of olive oil and cook the chicken breasts for 6-7 minutes per side, or until golden brown and fully cooked (internal temperature of 165°F/74°C). Remove from the skillet and let rest before slicing.

While the chicken is cooking, steam the broccoli florets. Add the florets to a steamer basket and cook for 4-5 minutes until tender but still crisp. Set aside.
