Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 2 cups Cooked white rice
  • 1 can (15 oz) Black beans, drained and rinsed
  • 1 cup Grated Cheddar cheese
  • 0.5 cup Salsa
  • 0.5 cup Sour cream
  • 2 tablespoons Fresh cilantro, chopped
  • 6 pieces Large flour tortillas (burrito size)
  • 1 optional Lime wedges (for serving)

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Season the chicken breasts with cumin, chili powder, garlic powder, paprika, salt, and black pepper on both sides.

Step 3

Cook the chicken breasts in the skillet for 5-7 minutes per side, or until they are golden brown and fully cooked (internal temperature should reach 165°F). Remove the chicken from the skillet and let it rest for 5 minutes before cutting into thin strips or shredding.

Step 4

In a mixing bowl, combine the cooked white rice, drained black beans, grated Cheddar cheese, and salsa. Stir until evenly mixed.

Step 5

Lay out the flour tortillas on a flat surface. Place an equal amount of shredded chicken and rice-bean mixture in the center of each tortilla.

Step 6

Fold in the sides of the tortilla and then roll it up tightly from bottom to top to form a burrito.

Step 7

Optional: If you prefer warm burritos, heat a clean skillet or griddle over medium heat. Place the burritos seam-side down and cook for 2-3 minutes per side, or until they are golden brown and slightly crisp.

Step 8

Serve the burritos with a dollop of sour cream, a sprinkle of chopped cilantro, and lime wedges on the side, if desired.
