  • 2 medium Carrots, diced
  • 2 stalks Celery stalks, diced
  • 1 medium Onion, finely chopped
  • 1200 milliliters Chicken broth
  • 1 leaf Bay leaf
  • 2 tablespoons Fresh parsley, chopped
  • 100 grams Ditalini pasta (or small soup pasta)
  • 500 milliliters Water

Directions

Step 1

In a large bowl, combine ground chicken, ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, and ground black pepper. Mix until well combined.

Shape the mixture into small meatballs, about 2.5 cm (1 inch) in diameter, and set aside on a plate.

Heat olive oil in a large pot over medium heat. Add the meatballs in batches and cook until browned on all sides. Remove them from the pot and set aside.
