  • 15 ounces canned black beans, drained and rinsed
  • 0.75 cups pearl barley
  • 1 pepper chipotle pepper in adobo, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cups cilantro, chopped (for garnish)
  • 0.5 cups shredded cheese, for serving
  • 0.25 cups sour cream, for serving

Directions

Step 1

Heat the olive oil in a large pot over medium heat.
