Ingredients

  • 1 piece (about 6 oz) Chicken breast
  • 4 slices Bacon
  • 4 slices Bread (thick slices, such as sourdough or brioche)
  • 4 slices Cheddar cheese
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Mayonnaise
  • 2 leaves Lettuce
  • 1 small (sliced) Tomato
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Place the chicken breast on a cutting board and season both sides with salt and black pepper.

Step 2

In a skillet, heat the olive oil over medium heat. Cook the chicken breast for 4-5 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the skillet and let it rest for 5 minutes before slicing thinly.

Step 3

In the same skillet, cook the bacon slices over medium heat until crispy, about 4-5 minutes. Remove and drain on paper towels.

Spread butter evenly on one side of each bread slice.

Step 5

On the unbuttered side of two slices, spread mayonnaise, then layer with lettuce, tomato slices, cooked chicken, bacon, and cheddar cheese. Top with the remaining bread slices (buttered side facing out).
