Ingredients

  • 1 cup All-purpose flour
  • 1.5 cups Milk
  • 2 large Eggs
  • 2 tablespoons Butter
  • 0.25 teaspoons Salt
  • 2 cups Cooked chicken breast
  • 1 large Avocado
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Sour cream
  • 1 teaspoon Minced garlic
  • 1 tablespoon Lime juice
  • 2 tablespoons Fresh parsley or cilantro
  • 1 teaspoon Olive oil

Directions

Step 1

In a medium-sized mixing bowl, whisk together the flour, milk, eggs, melted butter, and salt until the batter is smooth and lump-free. Set aside to rest for 10 minutes.

While the batter rests, shred the cooked chicken breast and place it into a bowl.

Halve and pit the avocado, then scoop out the flesh and mash it slightly. Add the avocado to the bowl with the chicken.

Mix the chicken and avocado with shredded mozzarella cheese, minced garlic, lime juice, and chopped parsley or cilantro. Stir together and season with salt and pepper to taste. Set aside.
