Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 12 ounces Penne pasta
  • 2 tablespoons Unsalted butter
  • 3 cloves Garlic cloves, minced
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 14 ounces Marinated artichoke hearts, drained and quartered
  • 0.25 cup Fresh parsley, chopped
  • 0.5 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Season both sides of the chicken breasts with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove from skillet, let rest for 5 minutes, then slice into thin strips.

Step 3

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

Step 4

In the same skillet used for the chicken, heat the remaining 1 tablespoon of olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
