Season both sides of the chicken breasts with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.
Reduce the heat to medium and add butter to the skillet. Once melted, add the sliced apples and cook for 2-3 minutes, stirring occasionally, until they begin to soften. Remove the apples from the skillet and set aside.
In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes, or until fragrant and translucent.
