Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon ground cinnamon
  • 2 large sweet apples, such as Honeycrisp or Fuji
  • 1 large yellow onion
  • 2 cloves garlic cloves
  • 1 cup chicken broth
  • 0.5 cup apple cider
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped
  • 1 tablespoon unsalted butter

Directions

Step 1

Season both sides of the chicken breasts with salt, pepper, and cinnamon.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3 to 4 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.

Step 3

Core and slice the apples into 1/2-inch wedges. Thinly slice the yellow onion. Mince the garlic cloves.

Step 4

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the sliced apples and onions, and cook for 5 to 7 minutes, stirring occasionally, until softened and lightly caramelized.

Step 5

Add the minced garlic to the skillet, and cook for 1 minute, stirring frequently to avoid burning.

Step 6

Pour the chicken broth and apple cider into the skillet, scraping up any browned bits from the bottom of the pan for extra flavor.

Step 7

Stir in the fresh thyme and rosemary. Simmer the mixture for 2 minutes to let the flavors meld.

Step 8

Return the seared chicken breasts to the skillet, nestling them into the apple-onion mixture. Reduce the heat to medium-low, cover the skillet, and cook for 15 to 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 9

Remove the chicken breasts from the skillet and place on a serving platter. Stir the butter into the apple-onion mixture until melted and combined, creating a glossy, flavorful sauce.

Step 10

Spoon the apple-onion sauce over the chicken breasts. Serve immediately, garnished with extra fresh herbs if desired.
