Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons butter
  • 4 pieces bacon slices
  • 1 medium white onion
  • 200 grams mushrooms
  • 2 tablespoons flour
  • 1 cup chicken stock
  • 0.5 cup heavy cream
  • 2 tablespoons fresh parsley
  • 4 servings boiled potatoes or steamed rice (for serving)

Directions

Step 1

Season the chicken thighs with salt and black pepper on all sides.

Step 2

In a large skillet or Dutch oven, melt the butter over medium heat. Sear the chicken thighs skin-side down until golden brown, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.

Step 3

Chop the bacon into small pieces and add it to the skillet. Cook until crispy, then remove with a slotted spoon and set aside.

Step 4

Dice the onion and slice the mushrooms. Sauté the onion in the remaining bacon fat for 2-3 minutes until translucent, then add the mushrooms and cook for another 4-5 minutes until softened.

Step 5

Sprinkle the flour over the onions and mushrooms, stirring constantly to coat and cook the flour for about 1 minute.

Step 6

Gradually pour the chicken stock into the skillet while stirring to prevent lumps. Bring the mixture to a simmer and let it thicken slightly.

Step 7

Stir in the heavy cream and return the seared chicken thighs to the skillet, nestling them into the sauce.

Step 8

Cover the skillet with a lid, reduce the heat to low, and let the chicken cook in the sauce for 25-30 minutes, or until the chicken is cooked through and tender.

Step 9

Add the crispy bacon back into the skillet and garnish with freshly chopped parsley.

Step 10

Serve the Chicken Amager hot with boiled potatoes or steamed rice on the side. Enjoy!
