  • 4 pieces boneless, skinless chicken thighs
  • 1 cup pineapple chunks (canned or fresh)
  • 0.25 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons ketchup
  • 2 tablespoons brown sugar
  • 2 cloves minced garlic
  • 1 teaspoon ginger (fresh, grated)
  • 2 tablespoons olive oil
  • 1 medium red bell pepper, diced
  • 2 stalks green onion, sliced
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups white rice (cooked, for serving)

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

In a large skillet, heat olive oil over medium-high heat. Once hot, sear the chicken thighs for 4-5 minutes on each side or until golden brown. Remove the chicken and set aside.

In the same skillet, add the diced red bell pepper and sauté for 3-4 minutes until slightly softened.

In a small bowl, whisk together soy sauce, honey, ketchup, brown sugar, minced garlic, and grated ginger to create the sauce.

In another small bowl, mix the cornstarch and water to make a slurry. Gradually stir the slurry into the skillet to thicken the sauce. Cook for 2-3 additional minutes until the sauce is glossy and thickened.
