Ingredients

  • 12 oz spaghetti
  • 2 pieces chicken breast
  • 4 tbsp unsalted butter
  • 3 cloves garlic cloves
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley
  • 4 quarts water

Directions

Step 1

Bring 4 quarts of water to a boil in a large pot. Add a generous pinch of salt, then cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, drain the rest, and set the cooked spaghetti aside.

Step 2

Season both sides of the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and fully cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and let it rest for 5 minutes before slicing it into thin strips.

Step 4

In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic and sauté for 1 minute until fragrant.

Step 5

Stir in the heavy cream and bring it to a gentle simmer. Cook for 3-4 minutes, stirring often, until the cream thickens slightly.

Step 6

Whisk in the grated Parmesan cheese gradually until fully melted and the sauce is smooth. If the sauce is too thick, stir in a few tablespoons of the reserved pasta water until it reaches your desired consistency.

Step 7

Taste and add the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, adjusting seasoning as needed.

Step 8

Add the cooked spaghetti to the skillet and toss to coat evenly in the Alfredo sauce.

Step 9

Transfer the spaghetti to serving plates, top with sliced chicken breast, and garnish with fresh parsley.

Step 10

Serve immediately and enjoy your homemade Chicken Alfredo Spaghetti!
