Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 3 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons All-purpose flour
  • 2 cups Chicken broth
  • 1 cup Heavy cream
  • 0.5 cup Milk
  • 2 cloves Garlic, minced
  • 0.5 cup Onion, finely chopped
  • 1 medium Green bell pepper, diced
  • 0.5 cup Frozen peas
  • 1 cup Button mushrooms, sliced
  • 0.25 cup Pimentos, drained and chopped
  • 4 servings Cooked rice, pasta, or puff pastry (optional, for serving)

Directions

Step 1

Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Dice into bite-sized cubes.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the chicken pieces and cook for 4-5 minutes until golden brown and fully cooked. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, melt the remaining 2 tablespoons of butter. Add the chopped onion, garlic, and green bell pepper. Sauté for 2-3 minutes until softened.

Step 4

Add the sliced mushrooms and cook for another 2 minutes until they release their juices.

Step 5

Sprinkle the flour over the vegetables and cook for 1 minute, stirring constantly to eliminate the raw flour taste.

Step 6

Gradually pour in the chicken broth while whisking to avoid lumps, followed by the heavy cream and milk. Stir well and let the mixture simmer for 3-4 minutes until thickened.

Step 7

Add the cooked chicken back to the skillet along with the frozen peas and pimentos. Simmer for another 2-3 minutes to heat everything through.

Step 8

Taste and adjust seasoning with the remaining salt and black pepper, if needed.

Step 9

Serve hot over cooked rice, pasta, or puff pastry for a complete meal. Enjoy!
