  • 2 cups Cherry tomatoes, halved
  • 4 cups Baby arugula
  • 0.25 cup Parmesan cheese, shaved

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

In a small bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, chopped rosemary, thyme, salt, and black pepper.

Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness of about 1/2 inch using a meat mallet.
