Ingredients

  • 6 pieces chicken thighs, bone-in and skin-on
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 units garlic cloves, minced
  • 0.25 cup white wine vinegar
  • 2 tablespoons honey
  • 0.25 cup raisins
  • 2 tablespoons pine nuts, toasted
  • 1 teaspoon fresh rosemary, chopped
  • 1 cup chicken stock
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Season the chicken thighs on both sides with salt and pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Place the chicken thighs skin-side down in the skillet and cook for 5–7 minutes until golden brown and crispy. Flip the chicken and cook for another 3 minutes. Transfer the chicken to a plate and set aside.
